Creamy balsamic mustard dressing elevates tender roasted pumpkin.
Ingredients:
  • 800g Kent pumpkin, peeled, seeded, cut into 3cm pieces
  • Sea salt flakes
  • 350g green round beans, trimmed
  • 1 bunch fresh continental parsley, leaves picked
  • 80ml (1/3 cup) balsamic vinegar
  • 23.40 gm Dijon mustard
  • 1 garlic clove, crushed
  • 125ml (1/2 cup) extra virgin olive oil
  • 125ml (1/2 cup) pouring cream
Instructions:
  • Prepare the balsamic dressing by whisking together vinegar, mustard, and garlic until smooth. While whisking constantly, slowly pour in the oil until fully incorporated. Finish by whisking in the cream and seasoning with salt and pepper.
  • Preheat the oven to 180°C. Line a baking tray with non-stick baking paper. Spread the pumpkin on the tray, drizzle with oil, season with sea salt and pepper. Roast for 20 minutes until tender. Let it cool before serving.
  • Cook the beans in a pot of boiling salted water for 3 minutes until they are bright green and tender crisp. Drain and let them cool down.
  • In a large bowl, gently mix together the pumpkin, beans, and parsley. Transfer to a serving platter and drizzle with the dressing.
