Gather loved ones for a festive Christmas dinner featuring succulent roast turkey with flavorful pistachio and lemon stuffing.
Ingredients:
  • 60g butter
  • 1 small brown onion, finely chopped
  • 165.00 ml fresh breadcrumbs
  • 82.50 ml pistachio kernels, toasted, chopped
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
  • 20.00 ml chopped fresh lemon thyme
  • 2kg double turkey breast (see note)
  • 6 sprigs fresh lemon thyme
  • 40.00 ml chicken gravy powder
  • 250.00 gm boiling water
Instructions:
  • In a frying pan over medium heat, melt half of the butter. Sauté the onion for 3 to 4 minutes until softened. Add breadcrumbs, pistachios, lemon rind, 2 tablespoons lemon juice, and half of the chopped thyme. Cook for 1 minute until breadcrumbs are golden. Take off the heat.
  • Lay the turkey skin-side down on a board. Spread the stuffing onto one turkey breast. Place the other breast on top to seal the stuffing inside. Use kitchen string to tie the turkey at 3cm intervals.
  • Preheat the oven to 180°C/160°C fan-forced. Melt the remaining butter in a microwave-safe dish for 1 minute on medium (50%) power. In a large roasting pan, add thyme sprigs and 3/4 cup of cold water. Place the turkey, skin-side-up, on top of the sprigs. Brush the turkey with the melted butter and season with salt and pepper. Roast for 2 hours until the turkey is browned and cooked through.
  • Place the turkey on a plate and cover it with foil. Let it rest for 10 minutes before slicing.
  • Place a pan over medium heat. Remove and discard thyme sprigs. Add gravy powder to the pan juices, then gradually stir in boiling water. Bring to a boil, then reduce heat to low and simmer for 2 minutes until slightly thickened. Stir in the remaining lemon juice and chopped thyme. Serve the turkey with the gravy.
