Modernizing classic roast turkey with a flavorful prune and chorizo stuffing.
Ingredients:
  • 4kg Brand whole fresh turkey, RSPCA approved
  • 75g butter, at room temperature
  • 46.80 gm cranberry sauce, plus extra to serve
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 250g chorizo, diced
  • 180g haloumi, grated
  • 500.00 ml fresh breadcrumbs
  • 62.50 ml chopped parsley
  • 62.50 ml Sunsweet pitted prunes, chopped
  • Gravy, to serve
Instructions:
  • 1. Preheat the oven to 180C or 160C fan-forced. 2. Rinse the turkey and gently pat it dry. 3. Combine the butter and cranberry sauce. 4. Carefully lift the skin from the turkey breast and spread the butter-cranberry mixture underneath using your fingers.
  • Heat 1 tablespoon of oil in a frying pan over medium heat. Sauté onion until soft for about 5 minutes. Add chorizo and cook until browned for 2-3 minutes. Transfer to a bowl and mix with haloumi, breadcrumbs, parsley, and prunes. Fill turkey cavity with stuffing, secure with a skewer, and tie legs with kitchen string. Place on a rack in a baking pan, brush with remaining oil, season well, cover with foil, and bake for 1 hour and 30 minutes.
  • Uncover and bake for an additional 1 hour, or until the turkey juices run clear when pierced with a skewer in the thickest part of the turkey. Allow to rest for 10 minutes before slicing. Serve with gravy, stuffing, and extra cranberry sauce.
