Vegetarian filo ring with capsicum, broccoli, and feta cheese - a showstopping dish!
Ingredients:
  • 100g butter, melted
  • 500g diced pumpkin
  • 1 red capsicum, chopped
  • 300g broccoli, cut into florets
  • 1 red onion, cut into thin wedges
  • 4 garlic cloves, sliced
  • 20.00 ml chopped fresh rosemary leaves, plus extra small sprigs, to serve
  • 16 sheets filo pastry
  • 100g fetta, crumbled, plus extra 50g to serve
  • Pepitas, to serve
Instructions:
  • Preheat oven to 200C/180C fan-forced. Line a large baking tray with baking paper, then lightly grease a 25cm fluted baba pan with a touch of butter.
  • Toss pumpkin, capsicum, broccoli, onion, garlic, rosemary, and oil on a baking tray. Season generously with salt and pepper. Roast for 20 minutes or until perfectly tender. Rest for 10 minutes before serving.
  • Layer 12 filo sheets in the pan, brushing each layer with butter and leaving edges hanging over. Add half of the veggies, sprinkle with fetta, then top with the rest of the veggies. Layer remaining filo sheets on top, brushing with remaining butter. Fold overhanging pastry on the sides.
  • Bake until pastry is golden, approximately 35-40 minutes. Let it rest for 5 minutes, then transfer to a serving platter. Add extra Fetta on top, drizzle with honey, sprinkle with pepitas and extra rosemary. Serve and enjoy!
