Roasted baby leeks caramelize into a sweet delicacy.
Ingredients:
  • 20 baby leeks
  • olive oil
  • red wine vinegar
  • 1 teaspoon chopped fresh thyme leaves
  • 2 cloves garlic peeled and sliced
Instructions:
  • Preheat your oven to 200°C/400°F/gas 6. Prepare 4 or 5 baby leeks per serving by lightly trimming both ends, peeling back a layer of leaves, and discarding it. Blanch the leeks in boiling salted water for 2 to 3 minutes, then drain well. Toss the blanched leeks with olive oil, red wine vinegar, thyme, and garlic. Arrange in a baking tray and roast in the preheated oven for about 10 minutes until golden and almost caramelized. Be vigilant to prevent burning, as baby leeks can char quickly when roasted.
