Ingredients:
  • 2 bunches baby (Dutch) carrots, peeled
  • Olive oil spray
  • 6.00 gm sesame seeds
  • 40.00 ml fresh coriander, chopped
  • 28.60 gm honey
  • 40g low-fat feta, crumbled
Instructions:
  • Preheat the oven to 200°C for this flavorful side dish.
  • Spread the carrots in a lined roasting pan and drizzle with olive oil. Roast for 25 minutes until tender.
  • Sprinkle sesame seeds on top and roast for an additional 5 minutes until tender. Top with fresh coriander, drizzle with honey, and toss to coat. Finish by sprinkling with feta.
