Make-ahead vibrant roasted beet salad with aged balsamic and maple dressing - a colorful meal addition.
Ingredients:
  • 6 medium beets, trimmed and scrubbed
  • 2 tablespoons aged balsamic vinegar
  • 2 teaspoons real maple syrup
Instructions:
  • Preheat the oven to 400°F (200°C). Wrap the beets in foil, then place them on a baking sheet.
  • Roast in the preheated oven for 50 to 60 minutes until fork-tender. Let cool for about 10 minutes, then peel and chop the beets.
  • Whisk together vinegar and maple syrup; season with salt and pepper. Drizzle the mixture over beets. Chill until flavors meld, preferably for 1 hour. Enjoy cold.
