Vibrant roasted root vegetables create a flavorful and nutritious side dish perfect for fall or winter.
Ingredients:
  • 6 medium beets, peeled and cut into chunks
  • 2.5 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon sugar
  • 3 medium sweet potatoes, cut into chunks
  • 1 large sweet onion, chopped
Instructions:
  • Preheat your oven to 400°F (200°C) for the perfect cooking temperature.
  • Coat beets with a drizzle of olive oil in a bowl, then arrange in a single layer on a baking sheet.
  • Combine the 2 tablespoons of olive oil with garlic powder, salt, pepper, and sugar in a resealable plastic bag. Add sweet potatoes and onion to the bag, seal, and shake well to coat the vegetables with the seasoned oil.
  • Roast beets in the oven for 15 minutes. Combine sweet potato mixture with beets on the baking sheet. Roast, stirring halfway through, until all vegetables are tender, for about 45 minutes.
