Oven-roasted beets caramelized with orange zest and balsamic glaze for a sweet and flavorful dish.
Ingredients:
  • 2 pounds red beets, medium sized, scrubbed clean, green tops removed (see beet greens recipe for what to do with beet greens)
  • 2 teaspoons extra virgin olive oil
  • Salt
  • 1/2 cup balsamic vinegar
  • 2 teaspoons sugar
  • 1 teaspoon grated orange zest
  • Freshly ground black pepper
Instructions:
  • Preheat your oven to 400°F and prepare your pan by lining it with aluminum foil.
  • To prepare the beets, coat them with olive oil, sprinkle with salt, and cover with foil in a pan.
  • Roast the beets: Roast for 1 to 2 hours until easily pierced with a fork. Remove from the oven when tender.
  • Make balsamic glaze: As beets cool, make the glaze. Combine balsamic vinegar and sugar in a small sauté pan. Simmer on high heat until it thickens into a syrup. Take off the heat.
  • Once the cooked beets have cooled slightly but are still warm, gently remove the outer skins and discard them. Proceed to cut the beets into quarters or bite-sized pieces.
  • To glaze the beets, transfer them to a serving bowl and generously drizzle with balsamic glaze. Gently mix in grated orange zest, then season with salt and pepper to your liking. Finish with a sprinkle of orange zest for a vibrant presentation before serving.
