Roasted broccoli and peas with garlic dressing

Zesty makeover for green veggies - a healthy side dish.
Ingredients:
  • 500g frozen broccoli florets
  • 250.00 ml frozen peas
  • 4 garlic cloves, unpeeled
  • 56.88 gm olive oil
  • 31.50 gm lemon juice
Instructions:
  • Blanch broccoli in boiling water for 2 minutes, then plunge into cold water to retain its vibrant color and flavor. Drain well before using in your dish.
  • 1. Preheat your oven to 220°C (200°C fan-forced) and line a baking dish with baking paper. 2. In a large bowl, mix broccoli, peas, garlic, and 2 tablespoons of oil until well combined. 3. Transfer the mixture to the prepared baking dish and bake for 15 to 20 minutes until the broccoli begins to brown. 4. Serve the roasted vegetables in a beautiful serving dish and enjoy!
  • Peel garlic and squeeze out. Discard skins. Place garlic in a bowl, mash lightly, then mix with lemon juice and oil. Season with salt and pepper. Drizzle over vegetables and serve.
