Roasted broccoli with hazelnut and zesty French dressing elevates this classic vegetable dish to new heights.
Ingredients:
  • 500g broccoli, cut into large florets
  • 60ml (1/4 cup) olive oil
  • 42.00 gm fresh lemon juice
  • 11.80 gm Dijon mustard
  • 145g (1 cup) dry roasted hazelnuts
Instructions:
  • Preheat the oven to 180°C. Toss the broccoli with 2 tablespoons of oil in a bowl, then spread it on a baking tray. Roast for 20 minutes or until tender.
  • Combine lemon juice, mustard, and remaining oil in a small jug while whisking.
  • Place the broccoli in a spacious heatproof bowl. Sprinkle the hazelnuts on top and drizzle the dressing over it. Mix well to combine everything. Serve promptly.
