Roasted butternut squash with brown sugar and candied pecans is a delectable side dish for any occasion.
Ingredients:
  • 8 cups cubed butternut squash (1-inch)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon Himalayan sea salt
  • 0.5 teaspoon ground cinnamon
  • 1 pinch cayenne pepper
  • 0.25 cup coarsely chopped candied pecans
Instructions:
  • Heat your oven to a toasty 400 degrees F (200 degrees C) and cover a roomy baking sheet with aluminum foil.
  • In a large bowl, mix together squash, olive oil, brown sugar, sea salt, cinnamon, and cayenne pepper until the squash is well coated. Spread the seasoned squash evenly on the baking sheet.
  • Roast in the preheated oven until edges are lightly browned and centers are tender, about 40-45 minutes, turning halfway through. Transfer to a serving dish and sprinkle with nuts for garnish.
