Roasted capsicum and chilli dip

Irresistible capsicum dip will keep you coming back for more.
Ingredients:
  • 1 large red capsicum, quartered
  • 150g feta
  • 1 garlic clove, crushed
  • 1 small red chilli, deseeded, chopped
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • Preheat a sizzling barbecue plate or fiery chargrill until smoking hot. Grill the capsicum skin-side down until beautifully blistered and charred, for about 3 minutes. Transfer the capsicum to a plastic bag, seal it, and let it rest for 10 minutes. Peel off the skin and roughly chop the smoky goodness.
  • Blend capsicum, feta, garlic, chilli, and parsley until creamy. Chill in a sealed container.
