Roasted capsicum and rocket pasta

Create a homemade spiced tomato sauce for a satisfying vegetarian pasta dish.
Ingredients:
  • 1 medium brown onion, finely chopped
  • 44.40 gm tomato paste
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 62.50 ml finely chopped fresh basil leaves
  • 120g thinly sliced roasted red capsicum
  • 40.00 gm rocket pesto
  • 80g baby rocket
  • Cooked spiral pasta, to serve
Instructions:
  • In a saucepan over medium heat, sauté onion and garlic in oil until onion has softened, about 5 minutes.
  • Stir in tomato paste, capsicum, and pesto. Cook for 1 minute. Pour in tomatoes and bring to a boil. Reduce heat and simmer for 10-15 minutes until sauce slightly thickens. Stir in fresh basil before serving.
  • Right before serving, mix in arugula with the sauce. Toss well to combine. Serve with spiral pasta.
