Roast prawn and tomato spaghetti

Easy Roasted Vegetable and Prawn Pasta with Mascarpone and Rocket - a simple, delicious meal requiring minimal effort!
Ingredients:
  • 250g baby red capsicums or red capsicum, seeded, cut into wedges
  • 400g grape tomatoes, halved
  • 2 garlic cloves, thinly sliced
  • 2 fresh thyme sprigs
  • 36.40 gm olive oil
  • 350g peeled green prawns
  • 375g spaghetti
  • 120g (1/2 cup) mascarpone
  • 50g baby rocket leaves
Instructions:
  • Preheat oven to 220C. Toss capsicum, tomato, garlic, thyme, and oil on a baking tray. Season generously. Roast for 7 minutes. Add prawns to the tray and roast for another 7 minutes or until they curl and turn pink.
  • Cook the pasta in a generously salted, vigorously boiling water until just tender. Drain and return to the saucepan.
  • Combine the tomato mixture and pan juices with the pasta, along with the mascarpone and rocket. Toss everything together until well mixed.
