Prawn salad with herb dressing

Elegant prawn and potato salad perfect for any occasion.
Ingredients:
  • 18.20 gm olive oil
  • 20.00 ml lemon pepper seasoning
  • 600g kipfler potatoes, scrubbed, roughly chopped
  • 700g medium cooked prawns, peeled, deveined
  • 2 celery stalks, trimmed, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 1 baby cos lettuce, leaves separated, torn
  • 62.50 ml small fresh mint leaves
  • 123.75 gm whole-egg mayonnaise
  • 1 garlic clove, crushed
  • 77.55 gm sour cream
  • 40.00 ml finely chopped fresh dill
  • 40.00 ml finely chopped fresh mint leaves
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Spread potatoes on a baking tray, drizzle with oil and seasoning, then mix well. Roast for 35 minutes until crispy and golden. Let cool before serving.
  • Prepare the dressing by mixing 1/4 cup of cold water with mayonnaise, garlic, sour cream, dill, and chopped mint in a bowl for a burst of refreshing flavor.
  • Combine the potato, prawns, celery, onion, lettuce, and mint leaves in a large bowl. Mix well to ensure everything is evenly coated. Drizzle with dressing before serving.
