Roasted carrots with kecap manis & ginger

Asian-inspired garlic ginger sesame carrots.
Ingredients:
  • 2 bunches baby (Dutch) carrots
  • 40.00 ml kecap manis
  • 2cm-piece fresh ginger, peeled, finely grated
  • 1 garlic clove, crushed
  • 125ml (1/2 cup) water
  • 6.00 gm sesame seeds
  • Steamed Asian greens, to serve
Instructions:
  • Trim the carrot stems, leaving 2cm attached. Peel and remove any excess dirt from the stems.
  • Heat oven to 200°C. Mix kecap manis, ginger, garlic, and half of the water in a small bowl.
  • Transfer the carrots to a 2L (8-cup) ceramic baking dish. Drizzle with the kecap manis mixture and toss until coated. Bake for 30 minutes, remember to toss occasionally. Pour in the rest of the water and bake for another 30 minutes or until the carrots are tender.
  • Toast sesame seeds in a small frying pan over medium heat, stirring often, for 2-3 minutes until golden brown.
  • Place the steamed Asian greens on a platter, layer with carrots, and finish by sprinkling sesame seeds for a delightful presentation.
