Roasted cauliflower salad with raisins, carrots, pecans, and creamy mayo dressing.
Ingredients:
  • 1 medium head cauliflower, cut into bite-size pieces
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 cup chopped celery
  • 0.5 cup shredded carrots
  • 0.5 cup mayonnaise
  • 0.25 cup chopped red onion
  • 2 teaspoons white sugar, or to taste
  • 0.33 cup toasted chopped pecans
  • 3 strips cooked bacon, crumbled
Instructions:
  • Preheat the oven to 425°F (210°C) and line a 12 x 18 inch baking sheet with parchment paper.
  • Toss cauliflower with olive oil, salt, and pepper in a large bowl until well coated. Spread seasoned cauliflower in a single layer on the baking sheet.
  • Roast the cauliflower in the preheated oven until the edges start to brown, around 10 to 15 minutes.
  • Take out of the oven and let it cool for about 5 minutes.
  • In a bowl, mix together celery, raisins, carrots, mayonnaise, red onion, and sugar. Add roasted cauliflower and toss to combine.
  • Transfer the vibrant salad to a beautiful serving bowl, then generously sprinkle with crunchy toasted pecan pieces and savory crumbled bacon for added depth of flavor and texture.
