Quick and delicious vegetarian pasta with roasted cherry tomato sauce. Great for busy nights!
Ingredients:
  • 4 cups cherry tomatoes, halved
  • 0.5 cup chopped shallots
  • 1 clove garlic, minced
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon salt
  • 0.25 teaspoon red pepper flakes
  • 1 (16 ounce) package penne pasta
  • 1 tablespoon chopped fresh basil
  • 0.25 cup freshly grated Parmesan cheese, or to taste
Instructions:
  • Preheat oven to 350°F (175°C).
  • Arrange tomatoes evenly in a 9x13-inch baking dish, ensuring they are in a single layer. Drizzle with olive oil, then add shallots, garlic, balsamic vinegar, sugar, salt, pepper, and red pepper flakes. Mix well until tomatoes are well coated with the flavorful mixture.
  • Roast uncovered in the oven, stirring occasionally, for 40 minutes.
  • While waiting, heat a large pot of salted water until boiling. Cook penne in the boiling water, stirring occasionally, until al dente, around 11 minutes. Drain the pasta and transfer it back to the pot.
  • Stir roasted tomatoes into the pasta along with fresh basil, then finish with a generous sprinkle of Parmesan cheese.
