Elevate s'mores with Roasted Crispy Rice Treats dipped in Betty Crocker™ Frosting for a tasty and fun summer treat!
Ingredients:
  • 10 cups mini marshmallows, divided (430g from 2 10-oz bags)
  • 6 tablespoons unsalted butter (85g)
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 6 cups crispy rice cereal (165g)
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Chocolate Frosting (150g)
Instructions:
  • Prepare an 8-inch square pan by lining it with parchment paper, which will make it easier to remove the crispy rice treats later on. (Note: Lining the pan is optional if using a non-stick pan.)
  • Reserve 2 cups of mini marshmallows for later use. Cut 15g of butter into tablespoon-sized pieces. In a large 10-inch saucepan, melt the butter over medium heat. Add 8 cups of mini marshmallows, lower the heat to low, and stir gently until fully melted and well combined.
  • - Stir in vanilla extract and salt until fully mixed. - Add cereal, mix until evenly coated in the marshmallow mixture. - Quickly fold in remaining 2 cups of marshmallows until evenly distributed.
  • Transfer the mixture into the baking pan and press down gently to form an even layer (dampen your fingertips to prevent sticking). Allow it to set in the pan at room temperature for a minimum of 1 hour. Cut into 8 equally-sized bars and insert roasting sticks or bamboo skewers into each one. Use a kitchen torch or campfire to delicately toast each rice treat to your preferred level of crispiness. Let them cool before serving.
  • Heat the frosting in a microwave-safe bowl for 10 seconds, stir, then microwave for another 10 seconds until it is softly melted but not runny.
  • Gently coat each crispy rice treat with the frosting, choosing to dip straight up and down, spoon over the top, or drizzle across. Enjoy immediately or store in an airtight container at room temperature for up to 3 days. Avoid refrigerating to maintain the perfect texture.
