Spiced roasted pork with nutty rice and crispy veggies.
Ingredients:
  • 1/2 tsp Chinese five spice
  • 2 (about 250g each) pork fillets
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 200g snow peas, halved diagonally
  • 150g sugar snap peas
  • 6 spring onions (shallots), thinly sliced
  • 300g (2 cups) cooked brown rice
  • 40.00 ml dry sherry
  • 2 tsp tamari or soy sauce
  • Thinly sliced long fresh red chilli, to serve
  • Strips of spring onion (shallot), to serve
Instructions:
  • Preheat your oven to 180C. Mix sesame oil and Chinese five spice in a dish. Add pork and toss to coat evenly. Cover and let it marinate for 10 minutes.
  • Preheat a large frying pan over high heat. Sear pork for 2 minutes on each side until golden brown. Transfer to a baking tray and roast for 10-12 minutes for medium doneness. Let it rest covered with foil for 5 minutes before serving.
  • Heat a wok over high heat. Spray with olive oil and stir-fry ginger until aromatic. Add snow peas and sugar snap peas, cook until tender crisp. Stir in sliced spring onion, then add rice, sherry, and tamari. Stir-fry until rice is heated through.
  • Slice the succulent pork thinly. Serve the flavorful fried rice in individual bowls. Garnish with the tender pork slices, spicy chili, and fresh spring onion strips.
