Curry roasted sweet potatoes and cauliflower: a delicious, simple side dish everyone will enjoy!
Ingredients:
  • 2 sweet potatoes, peeled and cut into 3/4-inch chunks
  • 0.5 head cauliflower, cut into bite-size pieces
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon curry powder
  • 1 tablespoon maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Toss sweet potatoes, cauliflower, black pepper, olive oil, curry powder, maple syrup, garlic, thyme, and salt in a bowl until well coated, then spread on the baking sheet.
  • Roast in the preheated oven until vegetables are tender and slightly golden, approximately 20 minutes.
