Elevate roasted delicata squash with a spicy homemade hot honey drizzle for a simple and flavorful side dish.
Ingredients:
  • 1 delicata squash
  • 0.25 cup honey
  • 1 tablespoon red wine vinegar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried thyme
  • 0.5 teaspoon smoked paprika
  • 1 pinch salt
  • 2 tablespoons extra-virgin olive oil, or to taste
  • 0.5 teaspoon kosher salt
Instructions:
  • In a small saucepan, mix together honey, vinegar, red pepper flakes, thyme, smoked paprika, and salt. Bring to a boil, then remove from heat and let cool to room temperature for about 30 minutes to let the flavors meld.
  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Rinse delicata squash and dry thoroughly. Slice into 1/2-inch rings, removing seeds from the center. Coat rings with olive oil and place on a baking sheet. Season with 1/2 teaspoon of salt.
  • Roast in the preheated oven until golden brown, flipping halfway through, for about 30 minutes. Finish by drizzling hot honey over the squash.
