Chef John's irresistible delicata squash: tender slices seasoned with olive oil, salt, and a kick of cayenne.
Ingredients:
  • 1 large delicata squash - ends trimmed, halved lengthwise, seeded
  • 0.125 teaspoon cayenne pepper, or to taste
Instructions:
  • Preheat the oven to a toasty 450 degrees F (232 degrees C) and prepare a rimmed baking sheet with parchment paper or a silicone mat.
  • Lay squash halves cut-side down on a cutting board, then slice into 3/8-inch pieces and transfer to a large bowl. Drizzle with olive oil, sprinkle with salt and cayenne pepper, and toss to coat evenly. Spread squash out in a single layer on a baking sheet.
  • Bake until the bottoms are golden brown and the squash is tender, about 12 to 18 minutes in the preheated oven.
