Roasted delicata squash: a sweet and tender fall side dish.
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • salt and ground black pepper to taste
  • 2 delicata squash, halved lengthwise and seeded
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Coat the bottom of a baking dish with a luxurious drizzle of olive oil. Sprinkle salt and pepper on the squash halves and place them cut-side down in the dish.
  • Roast in the preheated oven until the flesh is tender and can be easily pierced with a fork, for about 25 minutes. Then, flip the squash halves and roast for an additional 5 minutes.
