Sweet and nutty roasted elephant garlic spread with cream cheese, perfect for veggies, bagels, or crackers.
Ingredients:
  • 4 cloves elephant garlic
  • 3 sprigs fresh thyme
  • salt and freshly cracked black pepper to taste
  • 1 tablespoon olive oil
  • 8 ounces reduced-fat cream cheese, softened
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • Prepare garlic cloves by trimming the root end and removing the skin. Arrange the cloves on a large piece of aluminum foil. Tuck thyme sprigs in between the garlic, season with salt and pepper, and generously drizzle with olive oil. Seal the foil into a packet by folding the edges and place it on a baking sheet.
  • Bake the garlic in the preheated oven until soft and golden brown, about 45 minutes to 1 hour. Remove the thyme and allow the garlic to cool.
  • In a medium bowl, combine cream cheese and garlic. Mash the cloves with a fork, then season with salt and cracked black pepper to taste. Stir until well mixed. For a smoother texture, use a small food processor instead.
