Roasted Garlic Oven-Baked Chicken

Elevate your dinner with cozy home-style garlic chicken coated in crunchy potato flakes.
Ingredients:
  • 1 pouch (4.7 oz) Betty Crocker™ roasted garlic mashed potatoes
  • 1/2 teaspoon ground red pepper (cayenne)
  • 1 egg
  • 1/2 cup buttermilk
  • 3- to 3 1/2-pound cut-up broiler-fryer chicken
  • 1/3 cup butter or margarine, melted
Instructions:
  • Preheat oven to 425°F and coat a 13x9x2 inch rectangular pan with cooking spray.
  • Combine dry potatoes and red pepper in one dish. In a separate dish, whisk together foamy egg and buttermilk.
  • Coat chicken in egg mixture, then potato mixture. Arrange skin side down in pan, drizzle with butter. Dispose of any remaining potato and egg mixtures.
  • Bake the chicken uncovered for 30 minutes. Turn the chicken and continue baking for an additional 20-25 minutes, or until the coating is golden brown and the chicken juices run clear (breasts should reach 170°F; thighs and legs should reach 180°F).
