Indulge in a heavenly roasted garlic pasta, bursting with sweet, mellow, and nutty flavors. Elevate it with succulent sea scallops for a truly memorable date-night feast.
Ingredients:
  • 2 tablespoon finely chopped Italian parsley
  • 1 lemon, zested
  • 1 to 2 tablespoons lemon juice
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup peeled garlic cloves
  • 1/2 cup extra virgin olive oil
  • Salt and freshly ground black pepper to taste
  • 6 ounces angel hair pasta
  • 3 ounces pecorino Romano cheese, grated, plus more for serving
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C). Place garlic in a small oven-safe dish and cover it with olive oil until submerged. Seal the dish with a lid or foil.
  • Roast garlic in the preheated oven for 1 hour.
  • Combine fresh parsley, zesty lemon zest, tangy lemon juice, and spicy red pepper flakes in a spacious bowl.
  • After 50 minutes, boil a large pot of salted water. Cook pasta until al dente, about 4 to 5 minutes. Drain and set aside to keep warm.
  • Take out the roasted garlic from the oven and gently transfer the oil into the parsley mixture bowl. Add the roasted garlic, keeping cloves whole or crushing some. Mix in the cheese and season with salt and black pepper to your liking.
  • Mix the pasta thoroughly with the sauce until every noodle is coated. Serve the pasta in 2 bowls and top with extra cheese if desired. Enjoy your meal!
