Creamy pasta with roasted garlic sauce and mafalda - ideal for a meatless dinner.
Ingredients:
  • 2 bulbs garlic (about 2 ounces each)
  • 4 teaspoons olive oil
  • 3 cups uncooked mafalda (mini-lasagna noodle) pasta (6 ounces)
  • 1/2 cup half-and-half
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 small red bell pepper, chopped (1/2 cup)
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat your oven to 350°F. Cut the top off each garlic bulb to reveal the cloves. Drizzle 2 teaspoons of olive oil over each bulb, then wrap tightly in foil. Bake for 45 to 50 minutes until garlic is fork-tender. Squeeze the bottom of the bulbs to extract the roasted garlic.
  • Prepare the pasta according to package instructions. Keep warm.
  • Mix together perfectly roasted garlic, luxurious half-and-half, tangy vinegar, a sprinkle of salt, and a dash of pepper in a cozy 1-quart saucepan. Gently warm over low heat until just heated through. Add in the vibrant bell pepper and fresh parsley. Lastly, combine the garlic sauce with the pasta in a generously sized serving bowl. Enjoy this flavorful dish straight away.
