Cheesy Tuna Broccoli Skillet Casserole

Whip up a quick and delicious tuna and broccoli casserole with mafalda pasta!
Ingredients:
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (10 3/4 ounces) condensed cream of broccoli soup
  • 2 cups milk
  • 2 cups uncooked mafalda (mini-lasagna noodle) pasta (4 ounces)
  • 1 1/2 cups frozen broccoli cuts
  • 1 can (6 ounces) tuna, drained
  • 1/2 cup bite-size square crisp cheese crackers, crushed (1/4 cup)
  • 1/2 cup shredded Cheddar cheese (2 ounces)
Instructions:
  • 1. Prepare a 12-inch nonstick skillet by spraying it with cooking spray and heating it over medium-high heat. Cook the onion for 2 minutes until crisp-tender, stirring occasionally. Add soup and milk, then bring to a boil while stirring constantly. Mix in pasta and frozen broccoli, bring to a boil again, then lower the heat to medium. Cover and cook for 5 minutes.
  • Fold in the tuna, cover the pot, and simmer for about 5 minutes, stirring occasionally, until the pasta is tender.
  • Combine the crushed crackers and grated cheese, then sprinkle the mixture over the tuna. Cover the dish and allow it to sit for 1 to 2 minutes until the cheese has melted.
