Tuna and broccoli bread bake

Affordable twist on classic tuna casserole, ideal for cozy nights.
Ingredients:
  • 8 eggs
  • 250g broccoli, trimmed, cut into florets
  • 10 slices thick white bread, crusts removed, halved
  • 425g can tuna in oil, drained, flaked
  • 3 green onions, thinly sliced
  • 11.80 gm mild English mustard
  • 257.50 gm reduced-fat milk
  • 165.00 ml reduced-fat grated tasty cheese
  • Baby cos lettuce leaves, to serve
  • Cherry tomatoes, halved, to serve
  • Cucumber, sliced, to serve
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Place broccoli in a microwave-safe bowl, drizzle with 2 tablespoons of cold water, cover, and microwave on high for 2 minutes until vibrant green and tender. Refresh with cold water.
  • Grease a 6cm-deep, 20cm square ovenproof dish. Arrange 10 bread pieces on the bottom. Layer with broccoli, tuna, and onions. Finish by topping with the remaining bread slices.
  • Combine eggs, mustard, and milk in a jug and whisk until smooth. Season with salt and pepper, then pour the mixture over the bread. Sprinkle with cheese and bake for 1 hour and 10 minutes, or until just set. If it's browning too quickly, cover with foil. Let it stand for 5 minutes before serving with lettuce, tomato, and cucumber.
