Tuna and broccoli salad with hummus dressing

Wholesome, flavorful, and speedy - irresistible!
Ingredients:
  • 125g tub Uncle Ben's® Microwave Brown Rice Cups
  • 1/3 small head broccoli, cut into small florets
  • 95g can tuna in springwater, drained
  • 6 grape tomatoes, halved
  • 20g baby spinach
  • 40.00 ml low-fat hummus
  • 31.50 gm lemon juice
Instructions:
  • Cook rice in the microwave according to the instructions on the packet.
  • In a microwave-safe bowl, combine broccoli with a splash of water. Microwave, cover slightly, for 2 minutes or until broccoli is tender-crisp.
  • Combine rice, broccoli, tuna, tomato, and spinach in a bowl, gently tossing to mix.
  • Mix together the hummus, lemon juice, and 2 teaspoons of water in a small bowl. Drizzle the mixture over the salad and serve.
