30-minute cozy dinner: Tuna and broccoli in a delicious sauce, served with biscuits for the family.
Ingredients:
  • 2 1/4 cups Original Bisquick™ mix
  • 2 2/3 cups milk
  • 1/4 cup grated Parmesan cheese
  • 1 can (12 oz) chunk light tuna in water, drained
  • 1/8 teaspoon pepper
  • 2 cups frozen broccoli cuts
Instructions:
  • Preheat the oven to 450°F. Combine 2 cups of Bisquick mix and 2/3 cup of milk in a medium bowl until a soft dough forms. Drop the dough by 6 spoonfuls onto an ungreased cookie sheet. Bake for 8 to 10 minutes until the tops are golden brown.
  • In a 2-quart saucepan, whisk together 2 cups milk and 1/4 cup Bisquick mix until smooth. Cook over medium heat for 9 to 11 minutes, stirring constantly, until the sauce thickens. Add cheese, tuna, and pepper, then cook for an additional 1 to 2 minutes until hot.
  • Prepare the broccoli according to package instructions, then drain it.
  • To plate, cut each biscuit in half and place the bottoms on a serving plate. Spoon slightly less than 1/2 cup tuna mixture on each biscuit bottom, followed by 1/4 cup broccoli. Finish by placing the biscuit tops on each.
