Whip up this speedy broccoli pasta for a delicious weeknight dinner or on-the-go lunch option!
Ingredients:
  • 350g dried curly fettuccine
  • 2 medium tomatoes, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 30.00 ml white wine vinegar
  • 250.00 ml fresh basil leaves
  • 1 large head broccoli, cut into florets
  • 425g can tuna in oil, drained, flaked
  • 250g smooth ricotta
Instructions:
  • Prepare the pasta according to the package instructions. Remember to set aside 1/2 cup of the cooking liquid before draining.
  • While you wait, combine the tomato, onion, vinegar, and 1 tablespoon of oil in a small bowl. Finely chop half of the basil leaves and add them to the tomato mixture. Season with salt and pepper, then mix everything together.
  • In a large frying pan, heat the remaining oil over high heat. Cook the broccoli, turning occasionally, for 5 minutes until charred and tender. Transfer to a bowl and add the tuna along with the remaining basil leaves. Toss everything together to combine.
  • In the pan with the cooked pasta, combine ricotta and some of the cooking liquid. Mix well to coat the pasta. Season generously with salt and pepper. Plate the pasta, top with broccoli mixture, spoon tomato mixture over the top, and serve.
