Versatile broccoli side dish pairs perfectly with any meal - ideal for veggie bowls or alongside meat or seafood.
Ingredients:
  • 1 medium head broccoli (about 1 pound)
  • Salt and pepper to taste
Instructions:
  • Prepare the broccoli by rinsing it thoroughly. Trim off and discard the tough lower part of the stem (approximately half an inch). Separate the stem from the head and peel the outer layers using a vegetable peeler before discarding them. Slice the tender centers into coins across the grain, then chop them into small pieces. Shred the broccoli florets into pieces the size of a pea to an almond.
  • Sauté the broccoli in olive oil over medium-high heat until charred and softened, stirring occasionally for about 10 minutes. Season generously with salt throughout. Reduce heat gradually to medium to achieve a perfect balance of browning and steaming. The broccoli should reduce in volume by half and have no raw pieces remaining.
  • Season to perfection: Taste the broccoli and adjust with a sprinkle of salt and pepper, if necessary. Serve immediately. Leftovers can be stored in the refrigerator for up to 5 days, or in the freezer for up to 6 months.
