Creamy roasted potato soup with onions, garlic, and chicken broth - irresistibly satisfying.
Ingredients:
  • 6 potatoes, peeled and cut into 1 inch pieces
  • 2 tablespoons olive oil, divided
  • 6 cloves garlic, peeled
  • 3 cups chicken broth
  • 1 cup water
  • 1 cup whole milk
  • salt to taste
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Spread potatoes in a shallow roasting pan, generously drizzle with 1 tablespoon of olive oil, season with pepper, toss to coat, and bake for 25 minutes until golden brown. Set aside 1 cup of the roasted potatoes for later use.
  • Heat the remaining oil in a 3 quart saucepan, then saute the onions for 5 minutes. Add the potatoes and garlic, then stir in the broth and water. Bring the mixture to a boil, reduce the heat, and simmer uncovered for 20 minutes.
  • Pour half of the broth mixture into a blender and blend until almost smooth. Repeat with the rest of the mixture, then return all to the pot. Add milk and season with salt to taste. Serve in bowls and garnish with reserved roasted potatoes.
