Roasted Garlic Tzatziki

Elevate tzatziki with roasted garlic and strained yogurt for a creamy, cheese-like consistency. Serve with crusty bread, fries, pita, baked potatoes, gyros, souvlaki, falafel, or kebabs.
Ingredients:
  • 1 (16 ounce) container Greek yogurt
  • 0.5 English cucumber
  • 2 tablespoons roasted garlic puree
  • 2 tablespoons lemon juice
  • 10 fresh mint leaves, chopped
Instructions:
  • Strain yogurt in a paper coffee filter, paper towel, or 4 layers of cheesecloth over a bowl in the refrigerator for 24 hours to remove excess liquid.
  • Peel and grate the cucumber, then squeeze out excess water before placing in a bowl. Mix in strained yogurt, garlic puree, lemon juice, mint, and olive oil until well combined. Season with salt to taste, then chill before serving.
