Ingredients:
  • olive oil cooking spray
  • 1 pound baby red potatoes
  • 1 pound fresh green beans, trimmed
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon dried parsley
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously coat a rimmed baking sheet with cooking spray.
  • For golf-ball-sized or larger potatoes, halve them. Arrange potatoes and green beans in a single layer on the baking sheet. Drizzle with cooking spray and season with salt, garlic powder, pepper, and parsley.
  • Roast in the oven until the potatoes are tender, for 25-30 minutes.
