Roasted honey mustard pumpkin

Try our delicious roasted honey mustard pumpkin for a flavorful side dish.
Ingredients:
  • 1kg jap pumpkin, peeled, cut into 3cm-thick wedges
  • 57.20 gm honey
  • 23.40 gm wholegrain mustard
  • Fresh flat-leaf parsley sprigs, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line a shallow roasting pan with baking paper and lay the pumpkin slices in a single layer on the pan.
  • In a jug, mix oil, honey, mustard, and garlic. Drizzle over pumpkin and season with salt and pepper. Roast for 40-45 minutes until golden and tender, flipping halfway through. Let it rest for 3 minutes, then sprinkle with parsley before serving. For added fiber, keep the pumpkin unpeeled.
