Roasted pumpkin with pine nuts, honey, and mustard for a delightful combination of flavors and textures.
Ingredients:
  • 1kg pumpkin, peeled, chopped
  • 57.20 gm honey
  • 18.40 gm oil
  • 11.80 gm wholegrain mustard
  • 62.50 ml pine nuts, toasted
  • 40.00 ml parsley, chopped
  • 8 carrots, peeled, chopped
Instructions:
  • Preheat the oven to 180C (160C fan-forced).
  • In a baking pan, add pumpkin and carrot. Mix honey, oil, and mustard, then pour over the vegetables. Stir well to coat. Bake for 1 hour or until vegetables are tender.
  • Mix in crunchy nuts and fresh parsley right before serving for added texture and flavor.
