Enjoy crispy roasted Jerusalem artichokes, also called sunchokes, with olive oil and seasonings for a delicious and simple snack or side dish.
Ingredients:
  • 1 pound Jerusalem artichokes (sunchokes)
  • 0.75 cup olive oil
  • 2 tablespoons dried thyme
  • sea salt to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Prepare the artichokes by scrubbing the tubers and removing the eyes.
  • Cut the tubers into 1-inch cubes.
  • Combine olive oil, thyme, garlic, and sea salt in a large bowl. Add Jerusalem artichoke pieces and toss to coat. Spread out evenly on a baking sheet.
  • Roast in the oven until tender, for about 35 to 45 minutes.
