Roasted kabocha squash with olive oil and salt - versatile base recipe.
Ingredients:
  • 1 kabocha squash, cut into wedges and seeded
  • 1 tablespoon olive oil, or as needed
  • sea salt to taste
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • Lay kabocha squash wedges, cut-side up, in a baking pan. Gently brush with olive oil and sprinkle with a touch of sea salt.
  • Cook in the oven until easily pierced with a knife, about 35-40 minutes.
