Colorful roasted heirloom carrots are the perfect side dish for a delicious family roast.
Ingredients:
  • 3-4 parsnips, peeled, quartered lengthways
Instructions:
  • Preheat the oven to 180°C and line a baking tray with baking paper. Boil parsnips in salted water for 2 minutes, then drain, rinse under cold water, and pat dry. Coat parsnips in oil and season with sea salt and pepper before roasting on the prepared tray for 35-40 minutes until golden and tender, turning occasionally.
