Easy roasted parsnips with caramelized edges, tender and sweet, a perfect winter side dish.
Ingredients:
  • 1 pound parsnips, peeled
  • 2 tablespoons olive oil
  • 0.75 teaspoon garlic salt
  • 0.13 teaspoon freshly ground black pepper
  • 1 tablespoon minced fresh parsley
  • olive oil to drizzle
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  • Cut the larger ends of the parsnips in half lengthwise, then slice them on the diagonal into 1/4-inch-thick slices and place them in a bowl, making sure to keep the pieces similar in size. Drizzle the parsnips with 2 tablespoons of olive oil and season with onion powder, garlic salt, and pepper. Spread the seasoned parsnips onto the baking sheet in a single layer.
  • Roast the parsnips in the preheated oven until they are golden brown and tender, for about 25 to 28 minutes, flipping them halfway through. Transfer to a serving dish, garnish with parsley, drizzle lightly with oil, and season with salt and pepper to taste.
