Roasted parsnips

Enhance parsnips with vinegar, bay, and honey for a festive dish; leave unpeeled for optimal flavor.
Ingredients:
  • 1.5 kg medium parsnips
  • 50 g unsalted butter
  • 4 fresh bay leaves
  • 1 tablespoon white or red wine vinegar
  • 2 tablespoons runny honey
Instructions:
  • 1. Preheat the oven to 180ºC/350ºF/gas 4. 2. Scrub the parsnips, blanch in salted boiling water for 5 minutes, drain and pat dry. 3. Transfer parsnips to a roasting tray, add butter, salt, and pepper, coat well and spread out in a single layer. 4. Roast for 1 hour. 5. Remove from oven, sprinkle bay leaves, drizzle vinegar and honey, toss to combine. 6. Roast for another 10 minutes until golden brown.
