Roasted pear with walnut & ginger filling

Vegan Christmas starter; add blue cheese for vegetarians.
Ingredients:
  • 5 comice pears
  • 1 ½ teaspoon ground cinnamon
  • 1 teaspoon caraway seeds
  • 70 g walnut halves
  • 20 g pine nuts
  • 20 g stem ginger optional
Instructions:
  • - Preheat the oven to 180ºC/gas 4. - Halve, core, and arrange pears in an ovenproof dish, cut-side up. Sprinkle with ½ tsp cinnamon and caraway seeds. - Bake for 20-25 minutes until edges brown and flesh is soft. Allow to cool. - Toast walnuts and pine nuts on a baking tray for 4-5 minutes until golden. Set aside some pine nuts for serving. - Scoop out flesh from 4 pear halves, leaving the sides intact. Chop up 4 roasted pear halves and nuts in a food processor with ginger and cinnamon. - Fill pear skins with the mixture. Top with thinly sliced reserved pear, chopped pine nuts, and serve warm or cold, with a peppery salad on the side.
