Spiced roasted pork belly with rice and veggies - a satisfying main course.
Ingredients:
  • 1.5 teaspoons paprika
  • 1.5 teaspoons dried oregano
  • 1.5 teaspoons ground cumin
  • 1.5 teaspoons salt
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons ground turmeric
  • 1 pinch cayenne pepper, or to taste
  • 4 pounds whole pork belly
  • 2 tablespoons lemon juice
Instructions:
  • Mix paprika, oregano, cumin, salt, pepper, garlic powder, onion powder, turmeric, and cayenne pepper in a bowl. Massage the spice mixture onto the non-fat side of the pork belly. Cover with plastic wrap and chill for at least 2 hours, or overnight for best results.
  • Preheat your oven to 450 degrees F (230 degrees C) and line a rimmed baking sheet with parchment paper.
  • Unwrap pork belly and lay it onto the baking sheet, fat-side up. Score the fat in a checkered pattern and massage it with fresh lemon juice.
  • Roast in the preheated oven until fat starts to brown, about 30-40 minutes. Lower the oven temperature to 350°F (175°C) and roast until fat is crispy, for about 1 more hour. Let it rest for 10-15 minutes before slicing.
