Golden roasted pumpkin - a versatile side dish with ease.
Ingredients:
  • 2kg butternut pumpkin, peeled, cut into 3cm pieces
  • 4 garlic cloves, unpeeled
  • 36.40 gm olive oil
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Line 2 large baking trays with baking paper. In a bowl, combine pumpkin, garlic, oil, salt, and pepper. Toss to coat evenly.
  • Spread out the pumpkin mixture evenly on the baking tray. Bake until the pumpkin is golden and tender, about 40 minutes.
