Roasted pumpkin and goats cheese pizza

Pizza: Versatile Italian classic for family fun.
Ingredients:
  • 1 quantity Basic pizza dough (see related recipe)
  • 1 quantity Classic pizza sauce (see related recipe)
  • 1.2kg Kent pumpkin, seeded, peeled, cut into 2cm-thick slices
  • 2 red onions, cut into thick wedges
  • 18.20 gm olive oil
  • Salt and pepper, to season
  • 55g (1/2 cup) coarsely grated mozzarella
  • 120g goats cheese, crumbled
  • 20g baby spinach leaves
Instructions:
  • Prepare a simple and classic pizza dough.
  • Create a timeless pizza sauce.
  • - Preheat your oven to 200ºC. - Toss pumpkin, red onions, and olive oil together; season with salt and pepper. - Line a baking tray with non-stick paper and spread the pumpkin mixture in a single layer. - Bake for 25-30 minutes until pumpkin is tender; let it cool. - Increase oven temperature to 230ºC. - Scatter mozzarella on the pizza bases, then add the pumpkin mixture and crumbled goats cheese. - Bake for 20 minutes until the cheese melts and the base crisps up. - Finish off by topping with baby spinach leaves.
