Versatile roast pumpkin elevates any dish from pastas to pies.
Ingredients:
  • 3.5kg butternut pumpkin, peeled, seeded, cut into 2.5cm pieces
Instructions:
  • Spread pumpkin onto lined baking sheets. Drizzle generously with olive oil and sprinkle with salt and pepper. Mix well to ensure even coating. Roast at 180C for 35 to 40 minutes, or until golden brown and fork-tender. Allow to cool completely before proceeding.
  • Refer to freezing instructions for later use.
